Darlo Bar

Darlo Bar has held the Darlinghurst corner long enough to become a shorthand for the neighbourhood itself. The ground floor runs as a 1960s-styled public bar — oranges and yellows, terrazzo, vinyl booths — and the rooftop terrace above handles the lighter end of the work. The drinks stretch across craft beers and classic cocktails. The food is deliberately grazing-only: olives, nachos, cheese toasties, popcorn. A small boutique hotel tucked upstairs keeps the place running past midnight in every direction.

Dogs are welcome inside and up on the rooftop, on-lead. Water bowls are on hand and staff keep treats behind the bar. A Pup Wall of Fame carries photos of the regulars — which tells you exactly how settled this part of the operation is.
