Overview
Sauce Brewing went public in Marrickville in October 2017 after a year as a gypsy brewer, and has run the Marrickville warehouse as a production-plus-taproom hybrid since. Husband-and-wife founders Mike Clarke and Kate McBean built the outfit around a 'flavour first' brief, pushing a 500,000-litre annual run across IPAs, sours, stouts, pales and lagers, and added in-house Twizzle Cocktails as the sister label. The beer garden is the biggest on the Inner West Ale Trail and rotating food trucks cover the kitchen. The business was publicly listed for sale in early 2026.
Dogs are welcome in the beer garden, though reports of in-taproom tolerance have been mixed — calling ahead before Sunday service is the safer play. Marrickville's Inner West crowd fills the garden through summer weekends either way.
