Overview
Thirstville has run as a Marrickville bottle shop and bar hybrid since 2016, stocking curated local and international wines, craft beers, and artisanal spirits. The front has outdoor covered seating; the fit-out inside is built for pouring and serving by the glass as much as the bottle. The owners lean on community — tastings, events, partnerships with local producers — and the stock tilts toward natural and small-label wines. It runs as a neighbourhood stop for people who want something a bit more interesting than the usual bottle shop, and who also want a place to actually sit.
